Oh the Weather Outside is Frightful, but Inside Its So Delightful!

Our time has finally come for the first snow of the season! Yes, it is a little bit early than usual, but oh well. To wake-up this morning and see four inches on the ground in the beginning of October is an odd sight. I dubbed it a snow day (not that we do school or anything) and decided that I would spend the day baking and crafting. I have put aside the straightening of the house and got to work on more fun things. To start the day off I made a couple loaves of zucchini bread (YUM!).





Zucchini Bread
1 c. sugar
1c. brown sugar
1 c. vegetable oil
3 eggs
1 tsp. vanilla
2 c. grated zucchini
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1 tsp. ground ginger
1/2 tsp. cloves
1 c. chopped walnuts
In a large bowl combine sugar, oilm eggs, and vanilla. Add zucchini. In a seperate bowl sift together all the dry ingredients. Add dry mix to zucchini mixture. Pour into two greased 8x5 loaf pans. Bake at 325F for an hour. Cool for 10 minutes and then remove from pans.

Now, I don't know about any of you ladiesout there, but no matter how many loaves of zucchini, pumpkin, or cranberry bread I make, I have still yet to perfect the art of getting the whole loaf out of the pan without having the bottom ripped part of the way off. I spray a good coating of non-stick spray, and every now and then I get a whole loaf, but most of the time there is a good chunk missing. Does anyone have any ideas for me on why it does that or how I can fix the problem?

The next thing that was on my list was a to make a new fleece hat for my daughter since last years cap was just a little bit snug. For a slow-poke sewer like me it only took me about 30 minutes to get this made. It was really easy and now so she can go out and test the snow for the first time this year.


And last but not least it is time to start making some Halloween decorations. I went to the Martha Stewart website and printed off some of her fun decorations that are in her Halloween issue and I'm going to fill the house with scary creatures, witches and ghosts!

The hat is "almost" as cute as the baby wearing it! Zuchinni bread sounds great, but the sour cream orange rolls sound even better. Tomorrow! Love ya'll, Nanny

About the zucchini bread, if you flour your pans it should solve the problem--just toss a bit of flour in on top of your spray, shake it around to coat, and dump out the excess. If that doesn't work for you, you can cut a piece of paper to fit the bottom of the pan--that always works! :).

Sonia, Thank you for the advice. I'll remember to try one of those the next time I bake some bread, which should be pretty soon considering that the baking season is starting to pick up.
