Diggin' For Gold

Today I decided that it was high time that I break down and go pull up some of my potato plants and see what they had to offer. For some reason I have been putting it off because I don't want to go through all the potatoes before its time to pull them all up for the season. This is absolutely silly because we have plenty and I'm sure I'm going to have to pass some on to others just to get rid of some of them.

I got this bowl before I made myself stop pulling up plants (its like digging for gold...so fun!). These were just the little spuds I got off of my baby plants that haven't gotten as much water as the rest have. It'll be exciting to see what my large healthy plants have hidden beneath them.

I remember our first year out here on the ranch and m-i-l shared some with us from her own garden and as Rachel Ray says. "YUM-O!" For those of you who have never had a potato from the garden, you are missing out. You'll never want to go back to a spud from the store again. I highly recommend trying them in the garden some time. They're relatively easy to take care of and are well worth the wait!
